Fehcarem was started in 1996 under the initiative of 10 large catering groups, with the aim of responding to the needs and demands of a sector that day by day is playing a more important role in our economy.
October 1995 saw the beginning of the dev el opment committee made up of Cenesa- Zena-Vips and Ahuevo. March 1996 saw the formation of the group of ten that was to start up Ascarem's activity (Association of Modern Catering Chains)). From 1996-2000, under the chairmanship of Grupo CENESA, the following committees were set up: Hygiene, Human Resources and Institutional R el ations. The Hygiene Committee's work focussed on RACCP (Risk Assessment and Critical Control Points) and a Good Practice Guide for the Fast Food sector. The Human Resources committee dealt with the issues of: Sector Agreements, Training and the application of Health and Safety regulations. The Institutional Committee focussed on international contacts, Suppliers, Congresses, Sector Trade Fairs and their integration into the FEHR. Integration into the Spanish Catering Industry Federation (FEHR) was an important event leading to the headquarters being moved to Madrid . In this period, from 1996 to 2001, the number of members rose from 10 to 26.
In 2002, the number f el l to 23 members due to company mergers. The chairmanship was h el d by Fernando Marañon of McDonald's Spain . His aim was to make a quality leap, gain influence and focus on a more operational method. The Committees in being at that time were: Human Resources, and Institutional Operations and R el ations.
Currently, about 25 firms comprise Fehrecarem, under the chairmanship of Bernardo Rodilla, of Rodilla Sánchez, SL.. Fehrcarem's aims are to promote the sector's image, represent it before institutions and collaborate with society to try and bring about a more efficient and effective sector

At present, members of Fehrcarem alone account for 10% of turnover in the Catering Industry as a whole. It has increased its size threefold in three years in turnover terms, and twofold as to the number of venues available.
